Jude Mathis - Miso Soup

Jude's favorite dish is Miso Soup!

Equipment

  • Small soup pot
  • Small soup bowl

Ingredients

  • Miso
  • Wakame (dried seaweed)
  • Tofu - Cut into small cubes
  • Hot Water (amount depends on how much you'd like to make)
  • Green Onions - Sliced
  • Your Choice of Dashi

Directions

  1. In a small soup pot, bring water to a boil.
  2. Add dashi to your hot water - to taste
  3. Add miso to the water, the amount is to your liking.
  4. After miso dissolves, add your tofu, wakame, and green onions
  5. Serve into a bowl and enjoy!

Milla Maxwell - Takoyaki Ramen

One of Milla's favorite dishes is Takoyaki Ramen!

Equipment

  • Takoyaki pan
  • Takoyaki picks

Ingredients

Takoyaki

  • 1 Egg
  • 1/2 cup dashi broth
  • 1/2 cup of all-purpose flour
  • Chopped octopus
  • Kewpie Mayo
  • Takoyaki sauce
  • Red pickled ginger

Ramen

  • Green onions
  • Fishcake
  • Ramen noodles
  • Soup base or your favorite ramen

Directions

Prepare the takoyaki

  1. Beat the egg until smooth
  2. Whisk in broth, then flour. Continue to mix until smooth.
  3. Heat the takoyaki pan over medium heat and brush with oil
  4. Pour the batter evenly into each section. Add octopus, red pickled ginger, and green onions to each until each pocket is almost full.
  5. Let the edges brown, then rotate the takoyak so the raw batter cooks. Rotate and remove once evenly browned.

Ramen

  1. Prepare your favorite ramen noodles according to the package instructions
  2. Add ramen and takoyaki to bowl
  3. Top with fishcakes and green onions

Basic Ramen Shoyu Soup Base (optional if you don't have instant ramen packs)

  1. Bone broth of your choice
  2. Add in dashi to taste
  3. Add in soy sauce to taste

Rowen J. Ilbert - Mabo Curry

Rowen's favorite dish is Mabo Curry!

Equipment

  • Cutting Board
  • Deep cooking pan
  • Knife
  • Measuring spoons

Ingredients

  • Garlic
  • Ginger
  • Green Onions
  • 1/2 lb ground meat (your choice)
  • 2 Tbsp Doubanjiang (Chili Bean Sauce)
  • 2 tsp Sichuan chili flakes
  • 1-2 tsp Sichuan peppercorn powder
  • 2 Tbsp Shaoxing Wine
  • 1 tsp sugar
  • 2 tsp of corn starch
  • 4 tbsp water
  • Drizzle sesame oil
  • Chicken bouillon
  • 1 1/4 Cup of Water
  • 1~2 Curry cubes
  • Soft tofu

Directions

  1. Mince ginger and garlic
  2. Slice green parts of the onion and save the green part for garnish
  3. Blanch the soft tofu in salt water for 2 min
  4. Cook the ground meat on medium heat for a few minutes until water evaporates and meat browns
  5. Add white parts of the scallion, ginger, garlic, doubanjiang, chili flakes, and peppercorn powder
  6. Add Shaoxing wine and simmer for a few minutes
  7. Add soy sauce, sugar, and white pepper
  8. Add chicken boullion and water
  9. Add corn starch slurry
  10. Add tofu
  11. Add curry cube

Elize Lutus - Spicy Chicken Roll

Elize's favorite dish is Spicy Chicken Roll!

Equipment

  • Cutting Board
  • Mixing Bowl
  • Knife
  • Sushi rolling mat
  • Cling wrap

Ingredients

Tartar Sauce

  • 2 Eggs
  • 2 Tbsp Keypie Mayo
  • 1 tsp Sugar
  • 1 tsp Rice Vinegar
  • Black Pepper (to taste)
  • Chopped Green onions (optional)
  • Diced Onions (optional)
  • Dice Cucumber (optional)
  • Lemon

Sauce for Chicken

  • 2 Tbsp Soy Sauce
  • 1 tsp Rice Vinegar
  • 1/2 tsp Shichimi
  • 2 Tbsp Sugar
  • 1 Tbsp Mirin
  • Chili Oil

Chicken

  • 1/2 lb Chicken thighs (cut into smaller pieces)
  • 1 Cup of flour
  • 1 Egg
  • Salt
  • Pepper
  • Cooking oil

Roll

  • 1 Cup cooked white sushi rice
  • Sesame Seeds
  • Nori Sheets
  • Lettuce

Directions

Tartar Sauce

  1. Boil 2 eggs for 11 minutes
  2. Peel and then dice up the eggs or smash with a fork
  3. Combine the eggs and the rest of the ingredients in a mixing bowl and set to the side

Sauce for Chicken

  1. Combine ingredients into a mixing bowl

Chicken

  1. Heat up cooking oil in shallow pan to 375F
  2. Add a pinch of salt and pepper to the chicken thighs
  3. Coat chicken in flour
  4. Coat chicken in egg
  5. Fry chicken until cooked through
  6. Toss chicken into the sauce for the chicken

Roll

  1. Place the one sheet of nori on the sushi roller
  2. Flatten sushi rice onto the seaweed sheet
  3. Sprinkle sesame seeds onto the sushi rice
  4. Add lettuce to the sushi rice
  5. Place chicken onto the lettuce
  6. Roll the ingredients into a sushi roll
  7. Top the spicy chicken roll with the tartar sauce

Alvin - Peach Pie

Alvin's favorite dish is Peach Pie!

Equipment

  • Pot

Ingredients

  • Peaches
  • 1/4 Cup of sugar
  • Puff pastry
  • Dash of cinnamon
  • Lemon juice
  • 1 Tbsp of Cornstarch
  • Neutral oil for frying

Directions

  1. Dice up peaches
  2. Combine peaches, cornstarch, cinnamon, lemon juice and add to a saucepan to reduce
  3. Cook over medium heat and continue to stir until filling thickens
  4. Remove from heat, cover with plastic wrap, and place in the fridge to chill

Putting together:

  1. Scoop the sweet pie filling onto a puff pastry sheet
  2. Using a fork, crimp the edge of a second pastry sheet to form a pocket
  3. Leave the assembled pies in the freezer for 1 hour to make frying easier
  4. Fry until golden brown on both sides, using tongs or chopsticks to flip
  5. Leave on a wire rack or paper towel to absorb excess oil as it dries

  2. Put chazuke packet onto the rice
  3. Pour the cider onto the rice
