Jude Mathis - Miso Soup
Jude's favorite dish is Miso Soup!
Equipment
- Small soup pot
- Small soup bowl
Ingredients
- Miso
- Wakame (dried seaweed)
- Tofu - Cut into small cubes
- Hot Water (amount depends on how much you'd like to make)
- Green Onions - Sliced
- Your Choice of Dashi
Directions
- In a small soup pot, bring water to a boil.
- Add dashi to your hot water - to taste
- Add miso to the water, the amount is to your liking.
- After miso dissolves, add your tofu, wakame, and green onions
- Serve into a bowl and enjoy!
Milla Maxwell - Takoyaki Ramen
One of Milla's favorite dishes is Takoyaki Ramen!
Equipment
- Takoyaki pan
- Takoyaki picks
Ingredients
Takoyaki
- 1 Egg
- 1/2 cup dashi broth
- 1/2 cup of all-purpose flour
- Chopped octopus
- Kewpie Mayo
- Takoyaki sauce
- Red pickled ginger
Ramen
- Green onions
- Fishcake
- Ramen noodles
- Soup base or your favorite ramen
Directions
Prepare the takoyaki
- Beat the egg until smooth
- Whisk in broth, then flour. Continue to mix until smooth.
- Heat the takoyaki pan over medium heat and brush with oil
- Pour the batter evenly into each section. Add octopus, red pickled ginger, and green onions to each until each pocket is almost full.
- Let the edges brown, then rotate the takoyak so the raw batter cooks. Rotate and remove once evenly browned.
Ramen
- Prepare your favorite ramen noodles according to the package instructions
- Add ramen and takoyaki to bowl
- Top with fishcakes and green onions
Basic Ramen Shoyu Soup Base (optional if you don't have instant ramen packs)
- Bone broth of your choice
- Add in dashi to taste
- Add in soy sauce to taste
Rowen J. Ilbert - Mabo Curry
Rowen's favorite dish is Mabo Curry!
Equipment
- Cutting Board
- Deep cooking pan
- Knife
- Measuring spoons
Ingredients
- Garlic
- Ginger
- Green Onions
- 1/2 lb ground meat (your choice)
- 2 Tbsp Doubanjiang (Chili Bean Sauce)
- 2 tsp Sichuan chili flakes
- 1-2 tsp Sichuan peppercorn powder
- 2 Tbsp Shaoxing Wine
- 1 tsp sugar
- 2 tsp of corn starch
- 4 tbsp water
- Drizzle sesame oil
- Chicken bouillon
- 1 1/4 Cup of Water
- 1~2 Curry cubes
- Soft tofu
Directions
- Mince ginger and garlic
- Slice green parts of the onion and save the green part for garnish
- Blanch the soft tofu in salt water for 2 min
- Cook the ground meat on medium heat for a few minutes until water evaporates and meat browns
- Add white parts of the scallion, ginger, garlic, doubanjiang, chili flakes, and peppercorn powder
- Add Shaoxing wine and simmer for a few minutes
- Add soy sauce, sugar, and white pepper
- Add chicken boullion and water
- Add corn starch slurry
- Add tofu
- Add curry cube
Elize Lutus - Spicy Chicken Roll
Elize's favorite dish is Spicy Chicken Roll!
Equipment
- Cutting Board
- Mixing Bowl
- Knife
- Sushi rolling mat
- Cling wrap
Ingredients
Tartar Sauce
- 2 Eggs
- 2 Tbsp Keypie Mayo
- 1 tsp Sugar
- 1 tsp Rice Vinegar
- Black Pepper (to taste)
- Chopped Green onions (optional)
- Diced Onions (optional)
- Dice Cucumber (optional)
- Lemon
Sauce for Chicken
- 2 Tbsp Soy Sauce
- 1 tsp Rice Vinegar
- 1/2 tsp Shichimi
- 2 Tbsp Sugar
- 1 Tbsp Mirin
- Chili Oil
Chicken
- 1/2 lb Chicken thighs (cut into smaller pieces)
- 1 Cup of flour
- 1 Egg
- Salt
- Pepper
- Cooking oil
Roll
- 1 Cup cooked white sushi rice
- Sesame Seeds
- Nori Sheets
- Lettuce
Directions
Tartar Sauce
- Boil 2 eggs for 11 minutes
- Peel and then dice up the eggs or smash with a fork
- Combine the eggs and the rest of the ingredients in a mixing bowl and set to the side
Sauce for Chicken
- Combine ingredients into a mixing bowl
Chicken
- Heat up cooking oil in shallow pan to 375F
- Add a pinch of salt and pepper to the chicken thighs
- Coat chicken in flour
- Coat chicken in egg
- Fry chicken until cooked through
- Toss chicken into the sauce for the chicken
Roll
- Place the one sheet of nori on the sushi roller
- Flatten sushi rice onto the seaweed sheet
- Sprinkle sesame seeds onto the sushi rice
- Add lettuce to the sushi rice
- Place chicken onto the lettuce
- Roll the ingredients into a sushi roll
- Top the spicy chicken roll with the tartar sauce
Alvin - Peach Pie
Alvin's favorite dish is Peach Pie!
Equipment
- Pot
Ingredients
- Peaches
- 1/4 Cup of sugar
- Puff pastry
- Dash of cinnamon
- Lemon juice
- 1 Tbsp of Cornstarch
- Neutral oil for frying
Directions
- Dice up peaches
- Combine peaches, cornstarch, cinnamon, lemon juice and add to a saucepan to reduce
- Cook over medium heat and continue to stir until filling thickens
- Remove from heat, cover with plastic wrap, and place in the fridge to chill
Putting together:
- Scoop the sweet pie filling onto a puff pastry sheet
- Using a fork, crimp the edge of a second pastry sheet to form a pocket
- Leave the assembled pies in the freezer for 1 hour to make frying easier
- Fry until golden brown on both sides, using tongs or chopsticks to flip
- Leave on a wire rack or paper towel to absorb excess oil as it dries
